GOOD FOOD/BAD FOODS LIST
Dr. Wallach has a recommend a list of foods that you should avoid in order to help the body heal its self naturally. The Good Foods are acceptable to eat in a balanced diet.

THESE ARE THE GOOD FOODS
Eggs can benefit when eaten as a protein for a meal. 3 at a time in any one meal, 3 times a day.
Poach This is his number one choice because the water or broth never reaches a temperature greater than 212 degrees.
Scramble with butter over very low heat and only until they are just setting up. If you can hear them cooking it’s too hot.
Hard/Soft boiled with the yolk still runny. Bring pot to a boil, then put in eggs for 4 – 5 minutes. Take out and immediately place them in very cold water to cool and this will also help you peel the egg shell off easily when you’re ready to eat them.
Raw Eggs are good BUT you must increase your “biotin” because egg whites contain a protein that may interfere with your body’s ability to make use of it. This can be done by taking the Ultimate Hair, Skin & Nails Formula

Dr. Wallach recommends using salt and lemon juice as a salad dressing. No margarine or combo spreads. No mayonnaise. Nothing made from oils.
No burned fats– If you grill your food, try to have something between the food and the fire (like aluminum foil) so the juice doesn’t drip onto the flame and deposit dangerous things onto the meat.
Any nitrates added to meat– Deli meat, tell your butcher NO NITRATES or NITRITES
No carbonated drinks of any kind within one hour before, during or after one hour of meals
Skin of a baked potato or yam. If you boil a potato you can eat the skin
Corn– only 100% GMO free
Soy
Pure Buckwheat has FAGO Pyrites that are also harmful

Good evening and welcome everybody to this 30 minute meeting we have with Dr. Joel Wallach every Wednesday night. Legally we must say that this is for educational and entertainment purposes only. What you hear tonight is not intended to diagnose, treat or cure….that being said, it takes great discipline and changes in your mindset and habits to have the protocols work…because we know pigs are cured and dogs heal [play on words and reference to Doc being both a vet and a naturopath]… so, we are here to seek scientific and clinical advice on the use of nutrition to feel better.
If you have a desire to make a 90 day change in your lifestyle, you’ve come to the right place…not to say that you would stop after 90 days… but that is where you want to get started.
Both Dr. Wallach’s research and his development team have created an army of humans sharing this information with others about the benefits of following these protocols…. all done while he raised his children, worked in zoos and on humans, and went on the road to lecture.

I do want to talk about a couple of things today, one of which is life expectancy and maximizing that, and the second is macular degeneration.
I want to go back to the biblical days when people who lived the longest were said to come from places where the land was flowing with milk and honey.
Being a farmer [Doc was raised on a farm and studied agriculture in college], I tried to find what kind of cows, or goats, or camels they had in the Garden of Eden and all these other places where all these long-lived people in the Bible came from.
2:06 I found there were none.
So what I determined was that the land flowing with milk and honey was really bottom land… land such as in valleys… where mountains and glaciers were grinding up rocks UPSTREAM… and the SILT from these glaciers grinding up the rocks etc made the water floods flowing down from the mountaintops every spring LOOK LIKE MILK… it would be white, or gray, or kind of a creamy yellow… and this was kind of good because once it got down into the farmlands, where the water would either evaporate or sink into the ground…and leave all that silt on top… which the farmers would plow INTO the soil… so this would renew the minerals in the soil annually that way…. so that people who had bottom land found this very useful.
3:06 And then of course, when we went to electricity [in 1882]… we gave up WHAT REMAINED of that land flowing with milk and honey! [see below for how long some people lived BEFORE THE FLOOD and how long some lived AFTER THE FLOOD]
I have a book called Hell’s Kitchen which tells about the transition from using wood and coal ashes as fuel and fertilizers in the gardens and sweeteners and spices in our food – which was the way we were getting our minerals for thousands and thousands of years. When we went to electricity and had hydroelectric power we UNKNOWINGLY dammed up all the rivers flowing down from the mountaintops every year. So our source of our minerals went away.
3:55 When this happened, people began to die younger and started getting all these diseases… this is the short version of all this.
This is why you have to supplement with minerals. This is also very well documented in Chapter 10 of my book Rare Earths Forbidden Cures, which goes into the glacial milk, which is still available today in some places such as where the Hunzas live. Even today, their life expectancy is 120 compared with the USA’s 73-75 life expectancy… Australia is 82.9, Japan is 84.7, Canada is 84. China has two areas: in the north, where they live on wheat, barley, rye and oats…. their life expectancy is 71. In the south of China where they live on rice, sweet potatoes and seaweed… their life expectancy is 76.
4:59 I could go on with a whole big list of countries and locations, but you get the drift. So, the only way you can guarantee you will get all your minerals in optimal amounts is to supplement [and be careful about the QUALITY of these, because all supplements ARE NOT created equal] … you cannot eat well to get you minerals!
Plants do not make minerals. Plants make vitamins, amino acids and fatty acids… but they do not make minerals!
And minerals do not occur in a uniform blanket around the crust of the earth – they occur in veins like gold and silver. [or like the chocolate in vanilla chocolate ripple ice cream]
5:24 So the only way you can guarantee you get everything you need mineral wise is to supplement. Plants do NOT make minerals! You MUST supplement. This is why we have the Healthy Brain and Heart Pak, that is why we have our plant derived colloidal minerals and so forth. We have 5,000 products and we deal with helping people recover from over 600 different diseases.
5:44 Now, for the macula. The macula is the inside back of the eye. The retina is the lining of the inner part of the eyeball. In the back part of the eye, where the optic nerve, the optic artery and the optic vein go back and forth within, that area is called the macula.
In macular degeneration, it is very frequent that people have osteoporosis of the skull squeezing the optic nerve, squeezing the optic artery and the optic vein – so the nerve and food supply etc to the eye from food and supplement consumption – and whatever is absorbed from that – is being disrupted, which causes the macula to inflame, to swell, and to stop functioning properly.
6:30 And of course, in a healthy state it is rich with blood vessels, it is rich with nerves, and has lots to do with vision and the health of the eye and so forth.
So when you have macular degeneration, the odds are you have some osteoporosis of the skull squeezing the optic nerve – which is cranial nerve #2 – and squeezing the optic artery and the optic vein. We do have a book and CD set, called It’s All In Your Head, which goes into 37 different diseases that you get when you have osteoporosis of the skull squeezing the 12 pairs of cranial nerves and the spinal cord.
7:18 That book and CD set lists all 37 diseases and gives all the symptoms and gives you a great program to make your body healthy, including your brain and your eyes, including the 12 pairs of cranial nerves and your spinal cord. Again, there are 37 different diseases you can get when you have osteoporosis of the skull, one of which is macular degeneration.
7:49 So macular degeneration is not itself a disease in and of itself.
It is a SYMPTOM of the osteoporosis of the skull which is squeezing the 2nd cranial nerve and squeezing the optic artery and the optic vein.

9:40 Now I want to briefly talk again about the old days and biblical patriarchs and the ages they lived to, because I went through that pretty fast.
Here are the life spans of some biblical patriarchs who lived BEFORE THE FLOOD: Adam lived to be 930, Seth lived to be 912, Enos lived to be 910 [or was it 905?], Mahalalel lived to be 895, Jared lived to be 962, Methuselah lived to be 969, Lamech lived to be 777, and Noah lived to be 950.
10:09 SO BEFORE THE FLOOD, this was the life expectancy of some of these people living in these lands of milk and honey – which meant they had access to the glacial waters coming down from the tops of the mountains… so again we are talking about the source of minerals which was this water that had the ground up rocks etc in it, which they called milk because when you ground up the rock in those locations, it turned the water white and cloudy – so that is why they called it the land that flowed with milk and honey.
11:07 AFTER THE FLOOD life expectancy was shorter: Shem died at 600, Shelah at 403, Serug at 230, Nahor 148, Terah 205, Abram 175, Isaac 180, and Jacob 147.
So you can see life expectancies dropped considerably, compared to BEFORE THE FLOOD, and that was because they were not getting the minerals as before, because the source of water had changed because the earth had changed after the flood. So that covers that.
12:06 Again, we have the book and CD set It’s All In Your Head which covers what we talked about above. We also have the book The Wallach Revolution, which covers 75 years of our record of getting rid of some major diseases. We have two famous people, one Pat Boone – a great singer and actor who is around 80 years old now – who had bone to bone arthritis and was about to get a double knee replacement. I rebuilt him. He wrote the foreward for this book.
12:35 And then also, beloved actor Danny Glover. He had seizures and had epilepsy and he was going to be institutionalized! I rebuilt him – he no longer has seizures nor epilepsy. He wrote the last chapter in that book. So they are telling their stories… so people cannot say I made this up. [laughs]

Ok, that’s very easy. Have you ever heard of gluten?

OK. GLUTEN DESTROYS YOUR INTESTINAL VILLI. Your intestinal villi are those finger-like projections [holds his fingers up spread out and waving each finger gently] that make your intestinal lining look like a SHAG RUG.
THESE VILLI INCREASE THE SURFACE AREA [WHERE THE FOOD AND SUPPLEMENTS YOU INGEST GET ABSORBED] AND INCREASE THE EFFICIENCY OF HOW YOUR BODY ABSORBS THE FOOD YOU JUST CONSUMED. [We are not what we eat, as the saying wrongly goes… we are what WE ABSORB.]
Gluten, which is found in wheat, barley, rye, and oats, DESTROYS [not almost imperceptibly to the person – and this continues as long as the glutens are eaten] those villi, so INSTEAD OF LOOKING LIKE A SHAG RUG, AFTER JUST A COUPLE OF MONTHS of eating wheat, whether it is bread or bagels or cookies or crackers or cereal or spaghetti, THOSE VILLI GO AWAY… THEY DO NOT LIKE THE GLUTEN… And suddenly now instead of looking like a shag rug, your intestines look like a plastic tube [FLAT SURFACE] and you have lost 98% of your absorbing surface!
[STOP eating gluten and buckwheat, and your villi return!]
14:22 And people will say Well I took all your stuff but it did not do any good! Then I ask them What do you have for breakfast every morning? They say Well, I have oatmeal, I’ve been doing that my whole life! …….. Well, THERE YOU ARE ! I say Well you got to get rid of that!
Other people say, No I don’t eat any wheat, barley, rye, or oats – I use buckwheat. WELL THAT IS EVEN WORSE! BECAUSE, ALTHOUGH BUCKWHEAT DOES NOT HAVE ANY GLUTEN IN IT, IT DOES HAVE FAGOPYRINES [a toxic compound in the peel of buckwheat which is absorbed into the bloodstream after digestion and then reacts with sunlight… supposedly the peel is removed in most buckwheat found in stores ], WHICH ARE WORSE THAN GLUTEN!
14:44 And so the septic tank [i.e., your toilet…] gets the benefit of the supplements of people who are using buckwheat pancakes and that kind of stuff [or wheat, barley, rye, or oats]. I eat spaghetti all the time, BUT IT’S RICE SPAGHETTI, OK?…. I DON’T EAT WHEAT SPAGHETTI.
I4:59 I eat pizza 2 or 3 times days a week — but its crust or shell is made from rice or beets or onions or whatever — not wheat… What do I eat for breakfast every morning? I have rice, poached eggs, some kind of fruit, all my supplements… and I might have tomatoes. I DO like pizza, again, 2 to 3 meals a week. And of course, the pizza crust is made from rice or some vegetable or something like that [cheeses and cauliflower etc can be used]. No wheat, barley, rye, oats, or buckwheat.
15:59 And so this is very simple. You can buy frozen pizza that has gluten free and buckwheat free crust. So this is NOT DIFFICULT. It’s not like you have to go all over the world to find the right stuff. OK? And so I hope that answers your question… And I was going to say that people who eat gluten and buckwheat, no matter what form it is in … whether it is pizza crust or spaghetti or cereal or bread or cookies or crackers …
…ARE IN TROUBLE…. this is why people die in their 20s and 30s… of heart attacks… They might have been supplementing with $300 a month worth of vitamins and minerals, so people ask How did he die of a heart attach at age 30? ….
…Well, what did he have for breakfast every day? Oh, OATMEAL…What did he have for lunch every day? Oh, he had spaghetti… What kind of spaghetti? Well, you know, wheat spaghetti…Well, there you go! What did he have for dinner every night? Well, he had all kinds of wheat bread and toast and that kind of stuff… to go along with his fried steaks, or fried chicken, or fried fish…
such eaters are NOT going to live very long…. they’re going to be unhealthy, and they’ll be on 3 or 4, or 5 or 10, prescription drugs, OK?

Well, you can make gravy with rice flour, along with the juice from your meat…. this is why people need to get this book Doctor Wallach’s Cooking Without The Bad Foods… cause it has all the safe recipes for those things. If your family is scattered over 3 or 4 or 5 different states, then you need to get 3 or 5 of that book and make sure that every one of your family clusters, no matter where they’re at, has one of that book so that everybody’s doing all the right stuff….
…because if you eat 3 bad meals a week, you’re in trouble by the time you’re 30 or 40 years old… you may die before that….you cannot be eating those things and cooking improperly because it WILL cost you your life [or your health] ….

Good evening and welcome everybody to this 30 minute meeting we have with Dr. Joel Wallach every Wednesday night. Legally we must say that this is for educational and entertainment purposes only. What you hear tonight is not intended to diagnose, treat or cure….that being said, it takes great discipline and changes in your mindset and habits to have the protocols work…because we know pigs are cured and dogs heal [play on words and reference to Doc being both a vet and a naturopath]… so, we are here to seek scientific and clinical advice on the use of nutrition to feel better.
If you have a desire to make a 90 day change in your lifestyle, you’ve come to the right place…not to say that you would stop after 90 days… but that is where you want to get started.
Both Dr. Wallach’s research and his development team have created an army of humans sharing this information with others about the benefits of following these protocols…. all done while he raised his children, worked in zoos and on humans, and went on the road to lecture.

I do want to talk about a couple of things today, one of which is life expectancy and maximizing that, and the second is macular degeneration.
I want to go back to the biblical days when people who lived the longest were said to come from places where the land was flowing with milk and honey.
Being a farmer [Doc was raised on a farm and studied agriculture in college], I tried to find what kind of cows, or goats, or camels they had in the Garden of Eden and all these other places where all these long-lived people in the Bible came from.
2:06 I found there were none.
So what I determined was that the land flowing with milk and honey was really bottom land… land such as in valleys… where mountains and glaciers were grinding up rocks UPSTREAM… and the SILT from these glaciers grinding up the rocks etc made the water floods flowing down from the mountaintops every spring LOOK LIKE MILK… it would be white, or gray, or kind of a creamy yellow… and this was kind of good because once it got down into the farmlands, where the water would either evaporate or sink into the ground…and leave all that silt on top… which the farmers would plow INTO the soil… so this would renew the minerals in the soil annually that way…. so that people who had bottom land found this very useful.
3:06 And then of course, when we went to electricity [in 1882]… we gave up WHAT REMAINED of that land flowing with milk and honey! [see below for how long some people lived BEFORE THE FLOOD and how long some lived AFTER THE FLOOD]
I have a book called Hell’s Kitchen which tells about the transition from using wood and coal ashes as fuel and fertilizers in the gardens and sweeteners and spices in our food – which was the way we were getting our minerals for thousands and thousands of years. When we went to electricity and had hydroelectric power we UNKNOWINGLY dammed up all the rivers flowing down from the mountaintops every year. So our source of our minerals went away.
3:55 When this happened, people began to die younger and started getting all these diseases… this is the short version of all this.
This is why you have to supplement with minerals. This is also very well documented in Chapter 10 of my book Rare Earths Forbidden Cures, which goes into the glacial milk, which is still available today in some places such as where the Hunzas live. Even today, their life expectancy is 120 compared with the USA’s 73-75 life expectancy… Australia is 82.9, Japan is 84.7, Canada is 84. China has two areas: in the north, where they live on wheat, barley, rye and oats…. their life expectancy is 71. In the south of China where they live on rice, sweet potatoes and seaweed… their life expectancy is 76.
4:59 I could go on with a whole big list of countries and locations, but you get the drift. So, the only way you can guarantee you will get all your minerals in optimal amounts is to supplement [and be careful about the QUALITY of these, because all supplements ARE NOT created equal] … you cannot eat well to get you minerals!
Plants do not make minerals. Plants make vitamins, amino acids and fatty acids… but they do not make minerals!
And minerals do not occur in a uniform blanket around the crust of the earth – they occur in veins like gold and silver. [or like the chocolate in vanilla chocolate ripple ice cream]
5:24 So the only way you can guarantee you get everything you need mineral wise is to supplement. Plants do NOT make minerals! You MUST supplement. This is why we have the Healthy Brain and Heart Pak, that is why we have our plant derived colloidal minerals and so forth. We have 5,000 products and we deal with helping people recover from over 600 different diseases.
5:44 Now, for the macula. The macula is the inside back of the eye. The retina is the lining of the inner part of the eyeball. In the back part of the eye, where the optic nerve, the optic artery and the optic vein go back and forth within, that area is called the macula.
In macular degeneration, it is very frequent that people have osteoporosis of the skull squeezing the optic nerve, squeezing the optic artery and the optic vein – so the nerve and food supply etc to the eye from food and supplement consumption – and whatever is absorbed from that – is being disrupted, which causes the macula to inflame, to swell, and to stop functioning properly.
6:30 And of course, in a healthy state it is rich with blood vessels, it is rich with nerves, and has lots to do with vision and the health of the eye and so forth.
So when you have macular degeneration, the odds are you have some osteoporosis of the skull squeezing the optic nerve – which is cranial nerve #2 – and squeezing the optic artery and the optic vein. We do have a book and CD set, called It’s All In Your Head, which goes into 37 different diseases that you get when you have osteoporosis of the skull squeezing the 12 pairs of cranial nerves and the spinal cord.
7:18 That book and CD set lists all 37 diseases and gives all the symptoms and gives you a great program to make your body healthy, including your brain and your eyes, including the 12 pairs of cranial nerves and your spinal cord. Again, there are 37 different diseases you can get when you have osteoporosis of the skull, one of which is macular degeneration.
7:49 So macular degeneration is not itself a disease in and of itself.
It is a SYMPTOM of the osteoporosis of the skull which is squeezing the 2nd cranial nerve and squeezing the optic artery and the optic vein.

9:40 Now I want to briefly talk again about the old days and biblical patriarchs and the ages they lived to, because I went through that pretty fast.
Here are the life spans of some biblical patriarchs who lived BEFORE THE FLOOD: Adam lived to be 930, Seth lived to be 912, Enos lived to be 910 [or was it 905?], Mahalalel lived to be 895, Jared lived to be 962, Methuselah lived to be 969, Lamech lived to be 777, and Noah lived to be 950.
10:09 SO BEFORE THE FLOOD, this was the life expectancy of some of these people living in these lands of milk and honey – which meant they had access to the glacial waters coming down from the tops of the mountains… so again we are talking about the source of minerals which was this water that had the ground up rocks etc in it, which they called milk because when you ground up the rock in those locations, it turned the water white and cloudy – so that is why they called it the land that flowed with milk and honey.
11:07 AFTER THE FLOOD life expectancy was shorter: Shem died at 600, Shelah at 403, Serug at 230, Nahor 148, Terah 205, Abram 175, Isaac 180, and Jacob 147.
So you can see life expectancies dropped considerably, compared to BEFORE THE FLOOD, and that was because they were not getting the minerals as before, because the source of water had changed because the earth had changed after the flood. So that covers that.
12:06 Again, we have the book and CD set It’s All In Your Head which covers what we talked about above. We also have the book The Wallach Revolution, which covers 75 years of our record of getting rid of some major diseases. We have two famous people, one Pat Boone – a great singer and actor who is around 80 years old now – who had bone to bone arthritis and was about to get a double knee replacement. I rebuilt him. He wrote the foreward for this book.
12:35 And then also, beloved actor Danny Glover. He had seizures and had epilepsy and he was going to be institutionalized! I rebuilt him – he no longer has seizures nor epilepsy. He wrote the last chapter in that book. So they are telling their stories… so people cannot say I made this up. [laughs]

Ok, that’s very easy. Have you ever heard of gluten?

Yes.
DOC
OK. GLUTEN DESTROYS YOUR INTESTINAL VILLI. Your intestinal villi are those finger-like projections [holds his fingers up spread out and waving each finger gently] that make your intestinal lining look like a SHAG RUG.
THESE VILLI INCREASE THE SURFACE AREA [WHERE THE FOOD AND SUPPLEMENTS YOU INGEST GET ABSORBED] AND INCREASE THE EFFICIENCY OF HOW YOUR BODY ABSORBS THE FOOD YOU JUST CONSUMED. [We are not what we eat, as the saying wrongly goes… we are what WE ABSORB.]
Gluten, which is found in wheat, barley, rye, and oats, DESTROYS [not almost imperceptibly to the person – and this continues as long as the glutens are eaten] those villi, so INSTEAD OF LOOKING LIKE A SHAG RUG, AFTER JUST A COUPLE OF MONTHS of eating wheat, whether it is bread or bagels or cookies or crackers or cereal or spaghetti, THOSE VILLI GO AWAY… THEY DO NOT LIKE THE GLUTEN… And suddenly now instead of looking like a shag rug, your intestines look like a plastic tube [FLAT SURFACE] and you have lost 98% of your absorbing surface!
[STOP eating gluten and buckwheat, and your villi return!]
14:22 And people will say Well I took all your stuff but it did not do any good! Then I ask them What do you have for breakfast every morning? They say Well, I have oatmeal, I’ve been doing that my whole life! …….. Well, THERE YOU ARE ! I say Well you got to get rid of that!
Other people say, No I don’t eat any wheat, barley, rye, or oats – I use buckwheat. WELL THAT IS EVEN WORSE! BECAUSE, ALTHOUGH BUCKWHEAT DOES NOT HAVE ANY GLUTEN IN IT, IT DOES HAVE FAGOPYRINES [a toxic compound in the peel of buckwheat which is absorbed into the bloodstream after digestion and then reacts with sunlight… supposedly the peel is removed in most buckwheat found in stores ], WHICH ARE WORSE THAN GLUTEN!
14:44 And so the septic tank [i.e., your toilet…] gets the benefit of the supplements of people who are using buckwheat pancakes and that kind of stuff [or wheat, barley, rye, or oats]. I eat spaghetti all the time, BUT IT’S RICE SPAGHETTI, OK?…. I DON’T EAT WHEAT SPAGHETTI.
I4:59 I eat pizza 2 or 3 times days a week — but its crust or shell is made from rice or beets or onions or whatever — not wheat… What do I eat for breakfast every morning? I have rice, poached eggs, some kind of fruit, all my supplements… and I might have tomatoes. I DO like pizza, again, 2 to 3 meals a week. And of course, the pizza crust is made from rice or some vegetable or something like that [cheeses and cauliflower etc can be used]. No wheat, barley, rye, oats, or buckwheat.
15:59 And so this is very simple. You can buy frozen pizza that has gluten free and buckwheat free crust. So this is NOT DIFFICULT. It’s not like you have to go all over the world to find the right stuff. OK? And so I hope that answers your question… And I was going to say that people who eat gluten and buckwheat, no matter what form it is in … whether it is pizza crust or spaghetti or cereal or bread or cookies or crackers …
…ARE IN TROUBLE…. this is why people die in their 20s and 30s… of heart attacks… They might have been supplementing with $300 a month worth of vitamins and minerals, so people ask How did he die of a heart attach at age 30? ….
…Well, what did he have for breakfast every day? Oh, OATMEAL…What did he have for lunch every day? Oh, he had spaghetti… What kind of spaghetti? Well, you know, wheat spaghetti…Well, there you go! What did he have for dinner every night? Well, he had all kinds of wheat bread and toast and that kind of stuff… to go along with his fried steaks, or fried chicken, or fried fish…
such eaters are NOT going to live very long…. they’re going to be unhealthy, and they’ll be on 3 or 4, or 5 or 10, prescription drugs, OK?

If your family is scattered over 3 or 4 or 5 different states, then you need to get 3 or 5 of that book and make sure that every one of your family clusters, no matter where they’re at, has one of that book so that everybody’s doing all the right stuff….
…because if you eat 3 bad meals a week, you’re in trouble by the time you’re 30 or 40 years old… you may die before that….you cannot be eating those things and cooking improperly because it WILL cost you your life [or your health] ….
